The tea roots in clay laid down by the ancient Lake Biwa. Wide day-night temperature swings and morning fog slow the leaf's growth, and the slow growth concentrates the aroma. Grown without pesticides or chemical fertilizer.

This matcha is supplied as certified organic. The claim belongs to this product—not to Iga as a whole, and not to every tea grown there.
That distinction matters. Organic is not used here as a mood or a general idea of purity. It is a specific attribute of the matcha you are drinking.
Organic at Volume
Iga gives wholesale buyers a certified-organic ceremonial option with a specific origin and cultivar: Yabukita grown in the Iga highlands under Organic JAS certification.
That certification matters in procurement, but it also narrows supply. Organic cultivation lowers yield, and shading for ceremonial matcha reduces it again. Iga is therefore selected when an organic claim must be supported by the product itself and the menu needs a defined Japanese origin, not when organic is used as a general label.
